Hockey season is approaching (that’s right, hockey) and yelling at the TV for 3 hours makes it easy to work up an appetite. So, here’s a two-way recipe for cauliflower bites that satisfy like wings without the calorie bomb.

If you like it hot, these taste like you’re really getting away with something when buffalo sauce is involved. If you don’t want to play heartburn roulette, skip the buffalo and add some Parmesan to the mix. Win-win.

Ditch the greasy wings and enjoy these spicy buffalo cauliflower bites during the game.

Ingredients

For the Bites

  • 1 medium or large head of cauliflower, chopped into bite sized pieces
  • 23 tbsp extra-virgin olive oil
  • 2 tbsp cassava flour
  • 1/2 tsp salt (at most)
  • 1 tsp ground black pepper
  • 2 tsp garlic powder (do not use garlic salt)

For Buffalo Sauce Option

  • 1/2 cup your preferred flavor of Frank’s Red Hot Sauce (reduce to 1/3 cup and add a tablespoon of sriracha or chili garlic sauce if you’re brave like that)
  • 1 tbsp of ghee (room temp or melted)
  • 1 tablespoon coconut aminos
  • 1 teaspoon apple cider vinegar
  • Plain yogurt, coconut yogurt, or our amazing blue cheese dip for dipping (if desired)
  • Cut celery sticks for garnish (if desired)

For No Sauce Option

  • Add 1/4 cup finely grated fresh Parmesan cheese to the cassava flour mixture. Asiago might be good, too.

Instructions

  1. Preheat the oven to 450 degrees F.

For Buffalo Sauce

  1. Pour the Frank’s sauce into a measuring cup (to desired amount, depending on sriracha adaptation) and add ghee, coconut aminos, and apple cider vinegar. Whisk it with a fork until well combined.
  2. Divide and set half aside for brushing and reserve the other half for dipping.

For Buffalo Bites

  1. Line a baking sheet with parchment paper and spritz lightly with olive oil. If you’re going without the paper, hose that mother down.
  2. Place cauliflower pieces in a large bowl and spritz with olive oil or drizzle with 1-2 tablespoons (use as little as possible). Toss to coat.
  3. In a small bowl, combine the cassava flour, salt, pepper, and garlic powder.
  4. Pour dry mixture over cauliflower and toss until evenly coated.
  5. Arrange in a single layer on the prepared baking sheet, and bake for 20 minutes, turning half way through to crisp on both sides.
  6. Try a piece to test consistency. For a softer final texture, flip again and bake another 10 minutes (total of 30 minutes) before brushing with buffalo sauce. For a firmer bite, brush with the buffalo sauce after 20 minutes.
  7. Either way, bake for an additional 10 minutes after brushing.
  8. Plate and serve with celery sticks, reserved buffalo sauce, and optional yogurt or sour cream for dipping.

For Parmesan Bites

  1. Line a baking sheet with parchment paper and spritz lightly with olive oil. If you’re going without the paper, coat generously.
  2. Place cauliflower pieces in a large bowl and spritz with olive oil or drizzle with 1-2 tablespoons (use as little as possible). Toss to coat.
  3. In a small bowl, combine the cassava flour, salt, pepper, garlic powder, and 1/4 cup finely grated fresh Parmesan cheese.
  4. Pour dry mixture over cauliflower and toss until evenly coated.
  5. Arrange in a single layer on the prepared baking sheet, and bake for 30 minutes, turning half way through to crisp on both sides.
  6. Try a piece to test consistency. For a softer final texture, flip again and bake another 10 minutes (total of 40 minutes). Otherwise, remove from oven.
  7. Plate and serve. These are perfect on their own but can be served with a respectable dipping sauce. No, garlic butter does not qualify.
