We made a ginormous pot of pinto beans and figured out how to eat them all week long without getting bored. Enjoy refried beans without the added fat and calories. This version is rich and flavorful, vegan, and can be scaled up for a bigger group.

Instructions

  1. Pour vegetable broth or reserved liquid and beans to a small non-stick pot and warm over low-medium heat until the beans are hot all the way through.
  2. Strain and reserve liquid. Place the beans in a large bowl and mash until smooth, or pulse in a food processor. Add liquid one tablespoon at a time until desired consistency is achieved (may want it thicker for filling and thinner for dipping).
  3. If using broth instead of reserved liquid from our Basic Pinto Beans recipe, you will want to add some garlic powder, onion powder, cumin and chili powder to taste.
  4. As a dip, transfer to serving bowl, top with garnishes, and serve with cassava tortilla chips or crudité vegetables.
