Grain-Free Strawberry Rhubarb Crumble

Ingredients

For the Filling

  • 4 cups sliced ripe strawberries
  • 2 cups very thinly sliced fresh red rhubarb
  • 1/2 cup Lakanto Golden Sweetener or Swerve Brown Sweetener
  • 3 tbsp tapioca flour, packed
  • Juice of 1/2 lemon
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground cardamom

For the Topping

  • 1 cup finely walnuts or pecans 
  • 3/4 cup almond flour
  • 4 tbsp cold unsalted butter, cubed 
  • 2 tbsp coconut flour
  • 1 tbsp Lakanto Golden Sweetener or Swerve Brown Sweetener
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/8 tsp ground cardamom

Instructions

For the Filling

  1. Preheat oven to 375 degrees F and place rack at center position. Lightly grease a glass 8×8 pan and place on a rimmed baking sheet (in case the mixture bubbles over while baking). 
  2. Combine sweetener, cinnamon, cardamom, and tapioca flour in a small bowl. In a measuring cup or another small bowl, combine vanilla and lemon juice. 
  3. Slice the strawberries and rhubarb (if rhubarb stalks are thick, cut in half lengthwise before slicing) and add to a large bowl. Pour juice mixture over fruit and toss to coat evenly. Sprinkle half of the dry mixture over the fruit and toss. Repeat with the second half of the dry mixture, tossing until evenly coated. 
  4. Transfer to the prepared 8×8 pan, scraping the bowl with a rubber spatula, and spread into an even layer.

For the Topping

  1. Combine the sweetener, almond and coconut flours, salt, cinnamon, and cardamom a medium bowl. Add butter and use a fork or dough blender to cut the butter into the dry ingredients. Continue until a lumpy, crumbly texture develops. 
  2. Add chopped nuts and mix until just combined, then spread evenly over the fruit mixture in the baking dish. 
  3. Bake uncovered for 25-30 minutes, or until topping is a golden brown. Let sit 5-10 minutes before serving.
