Oven Roasted Asparagus

Twin Maple Orchard & Gardens was out at North End City Market (more info following recipe) with some gorgeous asparagus so we picked up a couple of bunches and created three different Oven Roasted Asparagus recipes as part of our Eat Local Series.

Roasting asparagus in the oven is so easy, we’re using the term “recipe” loosely. Cooking asparagus this way brings out its natural savory and nutty flavor and cuts the bitterness down to nothing. There are countless ways to season roasted asparagus, and we divided the asparagus spears to make lemon pepper, parmesan garlic, and wrapped – all on one pan. When using produce that’s this fresh it’s packed with flavor, so go easy on the seasoning. You’ll be glad you did.

Ingredients

For Lemon Pepper

  • 1 bunch fresh, thin asparagus spears
  • 1 lemon, divided
  • 2 tbsp extra-virgin olive oil
  • Pinches of salt and ground black pepper
  • Optional: Pinch of garlic powder or small garlic clove, minced

For Parmesan Garlic

  • 1 bunch fresh, thin asparagus spears
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp finely grated parmesan cheese or thinly shaved slices, to taste, from a block
  • 1 large garlic clove, minced (or a generous pinch of garlic powder)
  • Pinches of salt and ground black pepper

For Wrapped Asparagus

  • 1 bunch fresh, thin asparagus spears
  • 1 package of thinly sliced Prosciutto di Parma or turkey bacon
  • 1 tbsp extra-virgin olive oil
  • Pinch of ground black pepper (no need for salt)

Instructions

  1. Preheat oven to 425 degrees F and place rack at top position. Line a rimmed baking sheet with foil and set aside. 
  2. Rinse and strain the asparagus stalks before trimming. Nature knows best and the stalks will automatically break where they become tough and woody. Simply hold each stalk by the ends and bend until it snaps. Easy, no? 

For Lemon Pepper

  1. Place the trimmed asparagus on the baking sheet in a single layer and drizzle with up to two tablespoons extra-virgin olive oil. Roll the asparagus spears back and forth to coat evenly. 
  2. Sprinkle with salt, pepper, and minced garlic/garlic powder, if using.
  3. Cut half of the lemon crosswise into very thin slices, and the other half into wedges to reserve for serving. Lay the lemon slices on top of the asparagus and roast for 12-15 minutes, just until asparagus is tender at its thickest part.  

For Parmesan Garlic

  1. Place the trimmed asparagus on the baking sheet in a single layer and drizzle with up to two tablespoons extra-virgin olive oil. Roll the asparagus spears back and forth to coat evenly. 
  2. Sprinkle with salt, pepper, and minced garlic/garlic powder.
  3. Evenly sprinkle grated cheese or lay shaved slices lengthwise on the stalks and roast for 12-15 minutes, just until asparagus is tender at its thickest part.

For Wrapped Asparagus

  1. Place the trimmed asparagus a large plate or separate baking sheet in a single layer and drizzle with up to one tablespoon of extra-virgin olive oil, using a teaspoon at a time. Since the stalks will be wrapped, focus on coating the exposed tops and ends. Less is more. Sprinkle with ground black pepper and roll the asparagus spears back and forth to coat evenly.
  2. Slice the prosciutto or turkey bacon in half lengthwise and wind one cut strip around each asparagus stalk, from bottom to top, adjusting to distribute evenly. Trim with kitchen scissors if necessary and placed wrapped stalks in a single layer onto the prepared baking sheet. 
  3. Roast for 10-15 minutes, just until asparagus is tender at its thickest part. The turkey bacon or prosciutto will be crispy. Note: Turkey bacon can be cooked for 12-15 minutes but watch the prosciutto closely after 10 minutes and cook no more than 12. 


Notes

Use just enough oil to thoroughly coat. Since cooking time is short, a little goes a long way. 

Cooking time will vary depending on thickness of stalks. Check after 12 minutes and watch closely thereafter. 

Prosciutto works best with very thin asparagus stalks to ensure even cooking of the stalks without burning the meat.
