Easy Swiss Chard

Sautéed Swiss chard is an easy and nutritious side dish you can work in any time of day. We picked up a fresh bunch from Trogg’s Hollow CSA and Market Farm at Friday’s Rockford City Market and enjoyed this Easy Swiss Chard recipe with farm fresh eggs for breakfast the following morning. Easy Swiss Chard

Ingredients

  • 1 large bunch fresh Swiss Chard
  • 2 tbsp extra-virgin olive oil, divided
  • 1 large garlic clove, minced
  • 1/2 tsp garlic chili sauce
  • 1/8 tsp ground coriander
  • Pinches of salt and ground black pepper, to taste

Instructions

  1. Trim the ends of the stalks, then remove stalks from the leaves. Slice stalks crosswise into 1/4-1/2″ slices (like celery) and set aside. Cut the leaves into 1 to 1 1/2″ thick slices and set aside separate from the stalks.
  2. Add leaves to a large bowl. Combine garlic chili sauce and a tablespoon of the oil and drizzle over the leaves. Toss to coat, then sprinkle with coriander, and pinches of salt and pepper. Toss again.  
  3. Heat a large sauté pan over medium heat and add the remaining tablespoon of oil. Once hot, add the garlic and stir for about 30 seconds. Add the stalks and toss in the oil and garlic. Cook over medium-low for 2-3 minutes, until the stalks just begin to turn tender. Add the seasoned leaves and toss, then cover and cook until the leaves are wilted to your preferred texture (we like ’em with a little crunch), 2-4 minutes.  
  4. Serve immediately as a side dish to the protein of your choice. Great with eggs and a splash of sriracha.

Trogg’s Hollow CSA and Market Farm is a family-owned and run microfarm doing biointensive urban farming in Poplar Grove, Illinois.
