Sautéed Swiss chard is an easy and nutritious side dish you can work in any time of day. We picked up a fresh bunch from a local farmers market and enjoyed some quick and Easy Swiss Chard with Vegan Chickpea Flour Scrambled Eggs (or farm fresh eggs for our omnivore friends) for breakfast. Ingredients

Scale
  • 1 large bunch fresh Swiss Chard (about 4 packed cups once sliced)
  • 1 tbsp extra-virgin olive oil, divided
  • 1 large garlic clove, minced
  • 1/4 tsp garlic chili sauce (1/2 tsp if you like it hotter)
  • 1/8 tsp ground coriander
  • 1/8 tsp ground black pepper
  • Pinch of salt (about 1/16 tsp)

Instructions

  1. Trim the ends of the stalks, then remove stalks from the leaves. Slice stalks crosswise into 1/4″ slices (like celery) and set aside. Cut the leaves into 1″ thick slices and add to a large bowl. Combine garlic chili sauce and two teaspoons of the oil, drizzle over the leaves, and toss to coat. Combine coriander, salt, and pepper, sprinkle over the leaves, and toss again to coat evenly.  
  2. Heat a large sauté pan over medium heat and add the remaining teaspoon of oil. Once hot, add the stalks and cook for 2 minutes, stirring as needed. Add the garlic, reduce to medium-low heat, and cook 30 seconds to one minute, stirring frequently. 
  3. Add the seasoned leaves and toss. Let cook 30 seconds, then flip to bring the wilting leaves to the top. Cover, remove from heat and let rest 2-4 minutes, depending on desired tenderness (we like it with a little crunch). 

Notes

Serve immediately as a side dish to the protein of your choice. Great with Vegan Chickpea Flour Scrambled Eggs and a splash of sriracha.
