Apple Cinnamon Mug CakeÂ
Ingredients
For the Cake
- 3 tbsp egg whites
- 2 tbsp plain, unsweetened applesauce
- 1 tbsp plus 1 tsp Anthony’s Coconut Flour
- 1 tbsp plus 1 tsp Anthony’s Blanched Almond Flour
- 2 tsp to 1 tbsp Lakanto Golden Sweetener (sweeten to preference)
- 2 tsp Anthony’s Arrowroot Flour
- 1 tsp baking powder
- 1/4 tsp ground cinnamon
- 1/4 tsp vanilla extract
- Pinch of salt (optional)
For the Icing
- 1 tbsp Swerve Powdered Sweetener
- 3/4 tsp unsweetened almond milk (plain or vanilla)
Instructions
- Add the dry ingredients to a large microwave-safe mug and stir to combine completely.Â
- In a separate mug or bowl, add the egg whites, applesauce and vanilla and beat together thoroughly.Â
- Add the wet mixture to the dry mixture and mix until smooth, scraping the bottom and sides of the mug frequently. Once completely mixed, let sit for one minute.
- While the batter is resting, combine a tablespoon of powdered Swerve and 3/4 teaspoon of almond milk in a mug and stir immediately to combine and work out any lumps. Set aside.
- Microwave the batter, uncovered for 1 minute and 45 seconds. Once cooked, run a knife around the edge of the cake, carefully flip to release the cake and place on a plate, right side up. Let sit one minute, then drizzle with the Swerve icing and enjoy.Â
