Gluten-Free Feta Gnocchi Bake

Our Gluten-Free Feta Gnocchi Bake is on the table in under 40 minutes and perfect for a busy weeknight family meal.

Ingredients

  • 2 pints cherry tomatoes
  • 1 28-ounce package gluten-free gnocchi (soft, not dried)
  • 1 8-ounce block full fat feta cheese, quartered
  • 1 small yellow onion, diced
  • 4 large garlic cloves, minced
  • 5 tbsp extra-virgin olive oil, divided
  • 2 sprigs rosemary
  • 3 sprigs thyme
  • 1 tsp Lakanto Classic Sweetener (to reduce bitterness from the tomatoes)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley
  • 1/2 tsp dried basil
  • 1/2 tsp ground black pepper
  • Optional: Fresh herbs for garnish, grated parmesan for topping

Instructions

Place oven rack at center position and preheat oven to 425 degrees F. Wash and dry tomatoes, then add to a nonstick metal 9×13 pan. Add the onion, garlic, and gnocchi, drizzle with 3 tablespoons of olive oil, and toss to coat. Sprinkle with dried herbs and pepper and toss again.

Add the feta cheese, spacing the quarters a few inches apart, keeping them away from the edges of the pan. Drizzle the remaining 2 tablespoon of olive oil over the feta cubes, top the pan with rosemary and thyme sprigs, and bake for 30 minutes.

Discard the rosemary and thyme sprigs, sprinkle with Lakanto, and top with fresh ones for presentation, along with a sprinkle of fresh parmesan, if desired. Stir together when ready to serve.

Notes

Refrigerate leftovers in a glass airtight container up to four days.
