Pinto Beans and Cauliflower Rice

Pinto beans and rice recipes are equally abundant and varied. We’ve seen some that include ham and others that use ketchup (wut?). Our Pinto Beans and Cauliflower Rice is simple and straightforward, using just Homemade Taco Seasoning and the option of adding tomato paste or serving with fresh Pico de Gallo. Which is better and how do you serve it? Glad you asked.

If serving as a side dish or in salads, we recommend using Pico de Gallo. The mixture can also be used to make stuffed bell peppers, in which case, tomato paste with a little extra liquid is the way to go. Try it both ways or put your own spin on it and let us know how it turns out.

Pinto Beans and Cauliflower Rice

Pinto Beans and Cauliflower Rice

Ingredients

2 cups Instant Pot Pinto Beans (soaked or no-soak) with liquid

2 12-ounce bags of frozen cauliflower rice, thawed

1/4 cup unsalted vegetable broth/stock

1 tbsp Homemade Taco Seasoning

Salt, to taste (we used 1/8 tsp with unsalted beans)

Optional add-in: 1 tbsp tomato paste or serve topped with fresh Pico de Gallo

Optional garnishes: Lime wedges, diced red onions, jalapeno slices, guacamole, fresh cilantro.

Instructions

Add beans with liquid, cauliflower rice, and taco seasoning, to a large sauté pan. Warm over medium-high heat until the beans are heated through, cauliflower rice softens, and the liquid has reduced to desired thickness (5-10 minutes).

Serve immediately, garnished as desired.

Notes

Refrigerate leftovers in an airtight glass container up to 4 days.
