No one looks dignified trying to eat a shredded meat sandwich at a party, one-handedly from a flimsy paper plate. We’ve all been there. No more.

Not long ago, we made some ridiculous Instant Pot Pork Carnitas. We also made some equally ridiculous Grain-Free Mini Slider Buns, so it’s only natural that these Pork Carnitas Mini Sliders have come to pass.

Since everything can be made in advance, these are perfect for parties, office potlucks, and even game day snacks or a meal.

Pork Carnitas Mini Sliders you can make ahead. 


  • 3/4 to 1 lb Instant Pot Pork Carnitas, pan seared with reserved liquid
  • 1/4 cup reserved liquid from Instant Pot Pork Carnitas, warmed
  • 1/4 fresh lime (cut into a wedge)
  • 1 batch Grain-Free Mini Slider Buns
  • 24 cilantro leaves
  • Thinly shredded red cabbage and very thinly sliced red onion


  1. Slice slider buns and layer each with cabbage, seared carnitas, a splash of reserved liquid and lime juice, red onion, and a cilantro leaf. Secure with a toothpick and serve immediately. 
  2. Alternately, serve all ingredients buffet style for build-your-own sliders. 


Sear the pork covered, keeping it as wet as possible, so it doesn’t dry out too much.

If serving buffet style, serve in reserved liquid and with a bowl of small lime wedges so guests can add lime juice as desired.

Note: Cooking time assumes carnitas were made ahead.
