Pumpkin Spice Grain-Free Porridge
Pumpkin Spice Grain-Free Porridge

Ingredients
- 1/4 cup unsweetened vanilla almond milk
- 2 tbsp finely chopped walnuts
- 2 tbsp shredded unsweetened coconut
- 1–2 tbsp pure pumpkin puree, to taste
- 1 tbsp golden flax seed meal
- 1 1/2 tsp Lakanto Golden Sweetener
- 1 tsp chia seeds
- 1/8 tsp pumpkin pie spice
- Pinch of cinnamon
Instructions
- To a small bowl or mason jar add all dry ingredients and combine.
- Heat almond milk in microwave safe container for 30 seconds. It will be steaming but not scalded.
- Mix with pumpkin puree, then combine with dry ingredients and stir thoroughly.
- Top with additional chopped walnuts and a pinch of cinnamon, if desired. Serve immediately.
Notes
For a satisfying hot breakfast in under a minute, mix dry ingredients the night before in a small mason jar then prepare per directions in the morning.

Hi, I looked at this recipe and I don’t see the amount of pumpkin puree, yet in the instructions it calls for pumpkin puree? Also, do you have the nutritional information, especially the carbs, for your recipes? I’m keto and need to know the portion, the carbs and the fiber, please. thanks!

Thanks for pointing that out. It’s 1-2 tablespoons, to your taste (we fixed it). As for nutrition information, we have yet to find two nutritional calculators that give the same results for identical ingredients entered. Rather than publish erroneous information, we prefer to let you run the calculations on your own, accounting for any substitutions you make along the way. The FDA allows food manufacturers a ~20% margin of error on calorie counts and nutritive value regulations are a moving target, with new changes coming to nutrition calculations and labels in 2020 and 2021.
