Roasted Cauliflower Tacos

Cauliflower is in abundance at the HCC Realty Farmers Market/Colonial Village and we’re using some from Zanders Elmhurst Farm (more info following recipe) to make these delicious Roasted Cauliflower Tacos. We piled vegan tortillas high with loads of fresh vegetables and a creamy Cauliflower Queso for a 100% plant-based dinner that delivered meat and potatoes-level satisfaction. Now we need a nap.
